Meet Our Chef
Chef Dale Kester's culinary journey began honing his skills at Joseph’s Table in Taos, NM, under the mentorship of Chef Joseph Wrede. Following a brief tenure at the prestigious CIA (Culinary Institute of America), he ventured to Houston, where he refined his craft at the esteemed Hyatt Regency and Houston Country Club. Returning to his roots in New Mexico, Chef Dale worked in several kitchens across the state, including a notable return to Chef Wrede's side as Executive Sous Chef at Santa Fe’s Joseph’s Culinary Pub.
Chef Kester ventured to New York City, where he worked his way up to the role of Junior Sous Chef at the acclaimed 2 Michelin Starred Restaurant Daniel, a position he held for three formative years.
Returning to New Mexico, he assumed the esteemed position of Executive Chef at Santacafe in 2019, a role he continues to excel in.
Nestled in the charm and elegance of one of Santa Fe’s most beloved historical homes, Santacafé has been a restaurant icon for over 40 years. It was bought in 2019 by Santa Fe restauranteur Quinn Stephenson – the driving force behind another Santa Fe legend, Coyote Café.
Boasting one of the best outdoor patio dining experiences the City Different has to offer, Santacafé combines the traditions of modern American cooking with exquisitely locally sourced ingredients.
